Spice Encrusted Turkey Burger

Ingredients
- 1 pound ground turkey breast
- 1 Tablespoon mayonnaise (try the canola mayo)
- 1½ teaspoon olive oil; divided use
- ¼ cup red onion, finely chopped
- cooking spray oil
- 4 whole grain buns
- 4 lettuce leaves
- 4 thin tomato slices
- red onion slices (optional but delicious)
- 3 teaspoons Crazy Jane’s Mixed-Up salt
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
Instructions
- In a large bowl combine the ground turkey with the mayonnaise, 1 teaspoon oil, and onion. Mix well, being careful not to overmix. Divide your turkey into 4 relatively equal burger patties. Make the burgers as thin as possible, but not so thin that they fall apart (this facilitates quicker cooking to avoid dry burgers).
- In a medium bowl, mix your spices and then transfer them to a plate. Dredge each burger through the spice mixture on both sides.
- Spray a non-stick skillet with cooking spray and add ½ teaspoon olive oil. Place over medium/medium-low heat. Once oil is hot, add the burgers. Cook the burgers for 3 minutes on one side and flip. Cook another 5 minutes, but in the last 2 minutes of cooking add about 2 tablespoons of water to the pan and place the lid over the skillet to finish cooking. This is similar to shutting the grill lid (this helps get the meat to cook faster thus avoiding a dry burger). The burger is done when an internal temperature of 165 degrees is reached. Serve on a whole grain bun with lettuce, tomato and red onions. Feel like grilling? These burgers are moist (by design). A few hours before grilling, or the night before, prepare burgers through step 2, taking them out of the refrigerator 10-20 minutes prior to grilling. (They grill best if they have been in the refrigerator for a few hours or overnight). Oil-clean grill grates and preheat the grill to medium. Grill burgers for about 5 minutes on each side with the lid closed, or until the internal temperature reaches 165 degrees with a meat thermometer.
