Easter Brunch Crepes

Ready to use crepes make this a breeze so you have more time to celebrate the special occasion!
Ingredients
- 1 1⁄2 cup low fat cottage cheese (drained)
- 1⁄2 teaspoon lemon zest (zest of 1⁄2 lemon)
- 1 teaspoon vanilla
- 4 ounces reduced fat cream cheese
- 4 teaspoon sugar
- 4 cups peaches, peeled and sliced
- 1⁄4 cup packed brown sugar
- 2 tablespoons Smart Balance (or other spread without trans-fat)
Instructions
- To prepare filling, begin by draining cottage cheese through a sieve (you may need to work with it a little to drain adequately).
- Next, combine all the filling ingredients in a blender or food processor and process until almost smooth.
- Spread 2 1⁄2 tablespoons of mixture on the bottom one-third of each crepe.
- Fold the front flap of the crepe over the filling. Now fold each side over the filling and roll up the crepe. Set crepes in a baking dish with edges underneath.
- To prepare the topping, melt the Smart Balance in a large non-stick sauté pan over medium heat. Add sugar and peaches and let bubble for 1-2 minutes.
- To serve: Place baking dish in a low-heat oven (250-300 degrees) for about 5 to 10 minutes, or until the crepes are heated through. Don’t leave them in the oven too long or the cheese will become runny.
- Once heated, transfer crepes to individual plates and top with peach sauce.
