Raspberry Power Parfait

Ingredients
  • ½ cup plain soy milk
  • 1 Tablespoon ground flax seeds (or flaxseed meal)
  • 1 Tablespoon chia seeds
  • ½ cup Greek yogurt, plain, fat free
  • 1 teaspoon vanilla extract
  • ¼ cup old fashioned oats
  • ¾ cup raspberries, frozen or fresh
  • cinnamon, to taste
Instructions
  1. In a bowl or a jar with a lid put all ingredients in the order they were listed, except the berries.
  2. Stir to combine.
  3. Add raspberries, mix until throughout.
  4. Cover and refrigerate up to 5 days.
  5. Serve chilled with cinnamon, if desired.
  6. If you need to sweeten this tart treat, add 1 teaspoon of honey when it's time to serve. Or if you like it sweet and crunchy, add a tablespoon or two of granola (my favorite is Nature's Path Pumpkin Flax Granola).
